Taco Casserole Recipe

- 4 large flour tortillas
- 2 cups shredded cooked chicken (rotisserie chicken works well)
- 1 cup shredded Mexican cheese blend
- 1/2 cup diced bell peppers (assorted colors)
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil or cooking spray, for cooking
Optional Topping
- Sour cream
- Guacamole
- Salsa
- Chopped fresh tomatoes
- Sliced jalapeños

Prepare the Filling: In a mixing bowl, combine the shredded chicken, shredded cheese, diced bell peppers, diced red onion, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well to combine all the ingredients evenly.

Assemble the Quesadillas: Lay out the flour tortillas on a clean surface. Divide the chicken and cheese mixture evenly among the tortillas, spreading it out on one half of each tortilla, leaving a border around the edges.

Fold and Cook: Fold the tortillas in half over the filling to create a half-moon shape. Press down gently to seal the edges. Heat a large skillet or griddle over medium heat and lightly grease with olive oil or cooking spray. Carefully place the filled quesadillas onto the skillet or griddle and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted.

Serve: Remove the cooked quesadillas from the skillet and let them cool for a minute before slicing them into wedges. Serve hot with your choice of toppings such as sour cream, guacamole, salsa, chopped tomatoes, and sliced jalapeños.
