The ground beef in this taco casserole recipe is soft, and it's loaded with the greatest taco flavors, cheese, and Doritos on top! It's the ideal quick comfort dish for active families. Create a new twist on tacos by making a casserole that contains everyone's favorite ingredients, including seasoned meat, tortilla chips, and all the toppings. The chips are layered similarly to how lasagna noodles are arranged, and even after baking, some crunch will remain. The options for toppings are endless! Pickled jalapenos or your preferred salsa can be added, or you can stick with the traditional combination of avocado, sour cream, and lettuce. Step one: Preheat the oven to 350° F. (175 degrees C).
Step one: IPreheat the oven to 375° F. Heat the oil in a large Dutch oven over medium heat. the oil over medium heat. Combine the bell pepper, onion, poblano, and garlic in a mixing bowl. Cook, stirring occasionally, for 10 to 12 minutes, or until the vegetables are softened. Combine the ground beef and taco seasoning packet in a mixing bowl. Cook, stirring frequently to break up the crumbles, until browned, 6 to 8 minutes. Cook, stirring occasionally, until the canned tomatoes and green chiles, black beans, corn, and salt are well combined, about 2 minutes. Take the pan off the heat.
Step two: Coat a 13-by-9-inch baking dish with cooking spray. Arrange the tortilla chips in a single layer in the bottom of the baking dish, slightly overlapping (about 35 chips in a layer). Top with an even layer of about half of the ground beef mixture. Half of the cheese should be distributed evenly. Repeat the layers once more, finishing with the cheese on top. Serve with the remaining chips.
Step three: Bake the casserole for 16 to 20 minutes, or until the cheese is melted and beginning to brown on top. Allow to cool for 10 minutes before topping and serving.
